:: RATIONALE: “Food Security exists when all people at all times have economic and/or physical access to a sufficient supply of nutritious and quality food according to their cultural preferences in order to lead an active and healthy life. According to the 2013 Food Insecurity Report of the Food and Agriculture Organization of the United Nations (FAO), around 842 million people in the world currently suffer from chronic undernourishment and more than 2.000 million suffer from nutrient deficiencies or “hidden hunger”. At the same time, it is estimated that globally 1.200 million people suffer from overweight and obesity associated with improper eating habits and malnutrition.
These critical issues are on political agendas both locally and internationally, and are one of the greatest challenges facing humanity in the future.
Particularly, it is no small fact that the region of reach of the Universidad Nacional de Rosario, as well as extensively the central and coastal region, is characterized by having a profile that is clearly a producer of food and raw food materials. Located at the epicenter of this region, the UNR is exported from the ports of Rosario and surrounding areas, and more than 70% of the country's cereal is exported, and numerous processed food industries coexist, as well as influential marketing entities and associations that bring together producers. of various areas and scale.
At this juncture, the UNR Food Safety Policy and Management Master's training program helps to balance and complement certain monolithic paradigms, proposing to address this issue in its complexity, articulating from the University an interdisciplinary space for the generation of knowledge and projects, in order that the master students develop the necessary cognitive capacities and tools in order to design, project and manage policies for national food security, and cooperate, at the regional and international level, in one of the most urgent pending human issues.”
